A rustic tomato rice (Dami Gojeh) made with baby potatoes (unpeeled and washed), fried onions, tomato paste, warm spices, and grilled tomatoes blended into a rich puree.
The rice is pre-boiled, mixed with the sauce, and then steamed slowly over a wood fire.

Next to it, I grilled a half chicken on open fire, from belly to wing—crispy on the outside, juicy inside, infused with the smoky scent of burning wood.
