外酥內軟口感 氣炸薯界雙雄

專家發文分享,薯條分為馬鈴薯及番薯兩派,常見又經典的口味即是外酥內軟的馬鈴薯薯條,及香甜飽滿的地瓜薯條,專家也透露美味秘訣,讓民眾在家就能輕鬆做。
▲馬鈴薯vs番薯-產季大不同
1.馬鈴薯:台灣馬鈴薯以1-3月為主要產季,以雲林、台中及嘉義為主要產地,其中,每3顆馬鈴薯,就約有1顆是來自雲林。
2.番薯:番薯(地瓜)則是台灣一年四季皆有生產,現在正逢雲林及彰化的盛產期,市場上可見台農57號(黃金地瓜)及台農66號(紅心地瓜)等品種。
▲氣炸薯條美味秘訣
1.經典馬鈴薯薯條:首先,將馬鈴薯洗淨去皮、切條狀,想品嚐「外酥內軟」口感,可先滾水汆燙約5分鐘至半熟;再以紙巾擦乾水份,裝袋中加適量油、鹽搖晃均勻;最後再以200度氣炸15分鐘,翻面再5分鐘,美味薯條就完成了。
2.蜜地瓜薯條:首先,地瓜洗淨去皮、切條狀,想要「烤完不乾扁」,可於切條狀後泡水約15分鐘;再以紙巾擦乾,依序加入適量太白粉、油、鹽搖晃均勻;最後再以180度氣炸10分鐘、翻面再5分鐘,最後撒上梅粉即完成。
