INGREDIENTS:
1- Oil 2cup
2- Onion 800g sliced
3- Black pepper corn 1tbsp
4- Bay leaves 4
5- Cinnamon stick 4
6- Black cardamom 4
7- Cloves 1tbsp
8- Star anise 5
9- White cumin 3tbsp
10- Garlic and Ginger paste 140g
11- Mutton paya 1dozen
12- Coriander powder 2tbsp
13- Garam masala 1tsp
14- Cumin powder 1.5tsp
15- Turmeric powder 1tsp
16- Paya masala (any brand) 60g
17- Tomatoes 700g sliced
18- Water 5 litre

PROCEDURE:
1- Add oil in a pan, heat it a little then add onion.
2- Fry onion until it turns golden brown.
3- Now add black pepper corn, bay leaves, cinnamon sticks, black cardamom, cloves, star anise and white cumin. Mix it well.
4- Now add garlic and ginger paste then mix again.
5- Add mutton paya, coriander powder, cumin powder, garam masala, turmeric powder and paya masala.
6- Mix for 60 minutes and keep splashing water while doing bhunai.
7- Now add tomatoes then mix and let it cook for 10 minutes.
8- Now add 5 litre water then turn the flame very low and cook paya overnight.
9- Once it’s done, dish out and garnish with coriander leaves, green chilies, sliced lemon, julienne ginger.
