While #southerncooking isn't know for many chowders, a few still prevail. One, in particular, is a bacon and #corn chowder. In this video, Ken shows his contemporary revamping of a classical Southern chowder.

KEN'S SOUTHERN BACON & CORN CHOWDER

6-8 ears Sweet Corn, Kernels Cut Off and Cobbs Scraped
2 lb. Potatoes, Diced
1 lb. Bacon, Cut Into Lardons
24 oz. PictSweet Frozen Seasoning Blend
Ground Cayenne, to Taste
1 tbsp. Onion Powder
1 tbsp. Granulated Garlic
1 tbsp. ⁨@McCormickVideos⁩ Peppercorn Medley Grinder
2 tbsp. Lawry's Seasoned Salt
4 c. Water
4 Chicken Bouillon Cubes
1/2 tsp. Cajun Seasoning
1/2 c. Corn Starch
1 tbsp. ⁨@hiddenvalleyranch⁩ Ranch Dressing Powder
1 pt. Heavy Whipping Cream

Brown out the bacon and remove from the fat. Add in the seasoning blend to the fat and cook on high until onions are translucent but not browning. Add in the corn, potatoes, cayenne, onion powder, granulated garlic, peppercorn medley, and seasoned salt. Lid and cook for ten minutes on medium heat. Add in your water, bouillon, and bacon before placing a lid back on the pot and cooking for another ten minutes. In a bowl mix the Cajun seasoning, ranch dressing powder and cornstarch together before slowly incorporating the whipping cream. When the potatoes are cooked through, add in the slurry and stir well. Bring to a boil for about five minutes, adding water as is needed to reduce the chowder down to your desired thickness. TIPS: This dish actually tastes better when made with the more traditional, but harder to find, cured hog jowls. Using a homemade chicken stock or broth, instead of the water and bullion cubes, will give greater flavor to the dish. When in season, new potatoes (i.e., red potatoes, Irish potatoes) are better to use than Russets for flavor. Instead of bacon, try this chowder with grilled or smoked chicken or turkey.
