🔥 Garlic Confit: The Flavor Bomb You Didn’t Know You Needed | My Pioneering Life
Garlic confit is one of those pantry staples that quietly changes everything.
It’s mellow, buttery, and packed with deep garlic flavor—perfect for tossing into soups, stirring into sauces, or just spreading on toast.

In this episode, I’ll show you how to make garlic confit safely at home and how to use it in two of our favorite dishes: a hearty savory oatmeal and crispy garlic-Parmesan waffles (with two topping options!).

🧄 Garlic Confit Recipe
Ingredients:

2 cups peeled garlic cloves
2 cups neutral oil (light olive oil or avocado oil)

Instructions:

Place garlic cloves in a small saucepan or oven-safe dish.

Cover with oil and cook low and slow—either:

On the stovetop over low heat for ~45 minutes

In the oven at 250°F (120°C) for 2 hours

Cloves should be soft, lightly golden, and fragrant (not browned).

Let cool, transfer garlic and oil to a clean jar, and store in the fridge. Use a clean utensil every time.

⚠️ Important: Store in the refrigerator and use within 1 week. Do not leave at room temperature due to risk of botulism.

🍳 Savory Oatmeal Bowl with Garlic Confit
Ingredients:

1 cup rolled oats
2 cups chicken stock
1–2 garlic confit cloves, mashed
1 tsp garlic oil from confit
1 turkey sausage, sliced and pan-seared
¼ cup carrots, grated or chopped
¼ cup zucchini, diced
½ cup spinach
1 fried egg
1 tbsp pickled red onion, chopped

Instructions:

In a pot, combine oats, chicken stock, garlic confit, and garlic oil.

Cook until creamy.

Top with sausage, vegetables, egg, and pickled onion.

🧇 Garlic-Parmesan Waffles – Two Ways
Base Batter Ingredients:
1 ½ cups flour
2 tsp baking powder
½ tsp salt
2 eggs
1 ¼ cups milk
¼ cup garlic oil (from confit)
½ cup shredded Parmesan
1–2 cloves garlic confit, mashed
1 tbsp chopped chives
Instructions:
Whisk dry ingredients in one bowl, wet ingredients in another.
Combine and stir in cheese, garlic, and chives.
Cook in a waffle iron until golden and crisp.

Topping Options:

Option 1: Drizzle with warm garlic oil and a pinch of sea salt
Option 2: Top with smoked salmon, a poached or fried egg, and fresh herbs
