One Pan Chicken and Orzo

Ingredients
1.5-1.75 lbs boneless, skinless chicken thighs, sliced in half
4 garlic cloves, minced
2-3 Roma tomatoes, diced
2 cups orzo
4 cups chicken broth
3 tablespoons lemon juice, plus more to taste
Zest of 1 lemon
4 cups baby spinach
3 tablespoons olive oil

Directions
Season chicken on both sides with salt and pepper. Heat oil in a pan over medium high heat and sear chicken for 4 minutes on each side. Remove and set aside.
Add tomatoes and garlic, season with salt and cook for 2 minutes.
Add orzo and a little bit more oil and cook for another minute.
Add chicken broth, lemon juice and lemon zest and season with salt and pepper.
Bring to a boil, then return the chicken back to the pan. Cover and let simmer over medium low heat for 12 minutes.
Remove chicken and stir in spinach and olive oil. Adjust seasoning with salt and pepper if needed. One spinach has wilted remove from heat and return the chicken back to the pan.
