German Cabbage Rouladen - Keto friendly
KETO Kohlrouladen – Cabbage rolls
1 head savoy cabbage or green cabbage
1 yellow onion
Ground beef
Egg
Paprika
Bacon
Beef broth
Heavy cream
Almond flour to thicken sauce
Salt, pepper
Cotton twine
Tbs. butter
Carefully separate leaves from the head and briefly blanche them to make them easier to roll
Season raw ground beef with salt, pepper and paprika, add egg and finely chopped onion and mix well
Stuff each leaf with the ground beef mixture and roll up, tying with twine
Melt butter and add bacon strips. Add roulade seam side down first, brown on all sides.
Add the beef broth and let simmer on low for 40 minutes, turning roulade a couple of times
Remove roulade and set aside, covering with foil
Thicken sauce with almond flour and add heavy cream, fine tune seasoning.
Pour over rouladen. Serve with mashed or riced cauliflower
