CREAMY MINUTE TAPIOCA
1 box Minute Tapioca (8 oz.)
1 gallon milk
4 cups granulated sugar
7 eggs - separated
2 TBLS vanilla
32 - 48 ounces Cool Whip (the more cool whip the creamier it becomes)
Fruit if desired

Directions:
Pour about 3/4 of the milk into a large kettle
Sprinkle at least 2 cups of the sugar over the top of the milk
DO NOT STIR - let the sugar settle to the bottom of the kettle
Turn the burner on High and wait for the milk to heat.
DO NOT STIR! Let the milk come to almost to the boiling point.

Mix the remaining milk, sugar and tapioca along with the egg yolks
When the milk is hot add this mixture and begin to stir.
You must now stir continuously until it reaches a boil.

Remove from heat and add the vanilla
Pour over beaten egg whites and mix well.
Cover the pudding with film wrap
Press the film down onto the pudding (prevents a crust from forming)
Let the pudding cool to room temperature

Mix in desired amount of cool whip
Refrigerate until ready to serve.
Add fruit before serving if desired.
