Springtime in Texas! Delicious Cheesy Chicken Enchilada Casserole Recipe!

Hello we are Marge and Dave! We’re empty nesters married for over 31 years and live a fun and adventurous life with our dogs Pixie and CJ. Today I shop at our local Tom Thumb grocery store to get ingredients for a delicious cheesy chicken enchilada casserole. I learned how to make enchiladas from my in-laws, but I improvised and added my own touch to a new and improved recipe. I improvised this recipe to make a cheesy chicken enchilada casserole.

Later that weekend, we head to our community pool with the dogs to see if it’s opened yet and marvel at the spring bloom.
