Ingredients:

3 whole chickens with skin intact 2 tablespoons vegetable oil 3 medium-sized onions, chopped Spices: 1.5 tsp black pepper, 1 tsp green cardamoms, cinnamon barks, 2 pieces grated nutmeg, 2 tsp dried coriander, 15-16 cloves, 10-12 halved garlic cloves 16 cups of water Ground spices: 9 tsp salt, 3 tsp garam masala, 1.5 tsp black pepper, 1 tsp cardamom powder Yellow and red food coloring (optional) 9 cups rice 100g raisins 2 tablespoons olive oil
Method:

Sauté onions until softened, not changing their color. Add spices and sauté until aromatic. Stuff each chicken with half an onion and a lemon, then place them in the pot. Add water and ground spices to the pot and bring to a boil. Cook for 30 minutes on low flame. Apply yellow and red food coloring to the chickens and cook them for 10-12 minutes in the oven's top griller. Soak rice, then sauté onions, black pepper, and cardamoms in oil. Add the broth and spices and let it boil. Add the drained rice and raisins, then cover and cook for 15 minutes on low flame. Smoke the rice for a few minutes. Serve the cooked chicken on top of the flavored rice.
