Date and Chocolate Cake

Ingredients:

1 cup pitted dates

1 cup milk 🥛

2 eggs at room temperature 🥚

1 tbsp liquid vanilla 🍶

¼ cup yogurt 🥣

2 cups oat flour 🌾

1 tbsp raw cocoa powder 🍫

1 tbsp vinegar 🍶

A pinch of salt 🧂

1 tsp baking powder 🍚

2 tbsp chopped walnuts 🌰

Whole walnuts for garnish (optional)

Preparation:

1. In a mixing bowl, soak the dates in a cup of hot milk. Cover and let sit for an hour, then blend in a food processor.

2. In another bowl, beat the eggs with vinegar and vanilla until well combined.

3. Add the yogurt and the date-milk mixture, then mix well.

4. Gradually add oat flour, cocoa powder, baking powder, and salt, stirring until fully incorporated.

5. Gently fold in the chopped walnuts.

6. Pour the batter into a non-stick baking pan lined with parchment paper. Garnish with walnut pieces if desired.

Baking:

Preheat the oven to 180°C (350°F) and bake for 50 minutes.

After the first day, store the cake in an airtight container in the refrigerator.
