Chicken & Rice Soup Recipe 1 large whole chicken 2 tsp salt 1 tsp pepper 1 bay leaf 1/2 cup white wine (Optional) 1 medium onion 16 cups of water Rice 2 cups long grain rice 3 cups of water 1/2 tsp salt Secret Ingredient 1/2 baked small sweet potato Boil chicken, salt & pepper, bay leaf, white wine, medium onion and 16 cups of water for 3 hours. This will make sure that the chicken is done but not overcooked. You want to make sure that the chicken is covered. Cook rice on stove as directed on your rice bag Bake a small sweet potato and put half of it in the soup. Debone the chicken and use half for the soup and then the other half for another meal. Do not over cook I cooked mine for about 20 minutes then I served it up.
