ITALIAN CREAM CAKE
2 cup sugar 1 tsp soda
1 stick oleo, (imperial margarine)
1 cup buttermilk
1/2 cup crisco 1 tsp vanilla
1/2 tsp salt 1 cup pecans (chopped)
5 eggs (separated) 1 cup coconut
2 cup all purpose flour

Have oleo (we use the imperial margarine) at room temperature.
Cream oleo, shortening and sugar together.
Add egg yolks, one at a time. Mix well
Add vanilla, soda and salt. Mix
Add flour alternately with buttermilk.
Fold in nuts and coconut.
Beat egg whites till stiff and fold in.

Pour in greased and floured cake pans.
Makes 3 (8") layers or a 9x13 cake pan

Bake at 350* for 30 minutes or until cake is done

After cake is completely cool cover with cream cheese icing

CREAM CHEESE ICING
1/4 lb. oleo 8 oz cream cheese
1 lb 10X sugar 1/2 tsp vanilla

Have oleo and cream cheese at room temperature.
Beat oleo and cream cheese together.
Add vanilla
Add 10X sugar

Beat well and spread on cake. Top with pecans if desired.
