Ingredients
For the Chicken Shawarma:

- 2 cloves garlic, minced
- 1/2 cup water
- Salt, to taste

For the Assembly:
- Chopped parsley, tomatoes, onions, and pickles, for garnish

Instructions
1. Make the Pita Bread: Combine flour, salt, sugar, and yeast in a bowl. Gradually add warm water and mix until a dough forms. Knead for 5-7 minutes. Place in a greased bowl, cover, and let rise in a warm place for 1 hour. Preheat oven to 450°F (230°C). Divide dough into 4-6 pieces. Roll out each piece into a ball and flatten into a disk. Brush with olive oil and bake for 2-3 minutes on each side.
2. Marinate the Chicken: In a bowl, whisk together olive oil, garlic, lemon juice, paprika, salt, black pepper, and cayenne pepper (if using). Add the chicken and mix until coated. Cover and refrigerate for at least 2 hours or overnight.
3. Grill the Chicken: Preheat a grill or grill pan to medium-high heat. Thread the marinated chicken onto skewers, if using. Grill the chicken for 5-7 minutes per side, or until cooked through.
4. Make the Tahini Sauce: In a bowl, whisk together tahini, lemon juice, garlic, and water until smooth. Season with salt to taste.
5. Assemble the Shawarma: Slice the grilled chicken into thin strips. Warm the pita bread by wrapping it in foil and heating it in the oven for a few minutes. Spread a layer of tahini sauce on each pita bread, followed by a few slices of chicken, some chopped parsley, tomatoes, onions, and pickles. Serve immediately and enjoy!
