Vegan Matcha Mozz | An easy homemade mozzarella substitute recipe

I’m not a big fan of processed vegan cheeses: besides being... well... processed, made with who knows what ingredients, I find that the texture and look are prioritized over the flavour.
So I’ve been playing around for years making my own vegan ‘cheese’ substitutes.
Today you’ll see me trying to make a new recipe I ‘invented’ - dowsing it with my pendulum. The result? Well, the texture and look may not be there, BUT the flavour is! Trust me, you won’t miss the cheese on your pizza (or bruschetta) using this vegan ‘mozzarella’! Try it and judge for yourself! And if you do, don’t forget to let me know how it goes! 😉

Gino’s vegan matcha mozz recipe:
1.5 cup water
2 cups sunflower seeds soaked in water for 6 hours or overnight, and strained
1 can butter beans
2 tsp coriander seed powder
2 tsp celery seeds
2 tsp onion powder
2 tsp matcha green tea powder
1/2 tsp mustard powder
2 Tbsp icing sugar
1/4 cup white bread flour
1/2 tsp salt

Put the water in the blender, followed by all the other ingredients (this way the dry ingredients won’t stuck to the bottom. Blend them all together. Put the mixture in a pot and heat it up, stirring often. When you see steam or it starts simmering, cook it for 5 min. Put the mixture in one or two glass containers and when cold, put it in the fridge. When chill, enjoy it with your favourite bread or pizza toppings.
