Baked chicken and potatoes is a hearty and complete dinner all made in one pan! My version includes a little bit of lemon and butter, which makes this meal so flavorful and delicious!

Baked Chicken & Potatoes

Ingredients

6 chicken bone in thighs (I removed the skin)
2-3 potatoes, cut into bite-size pieces
1 onion, sliced
5 garlic cloves, minced
1 1/2 teaspoons smoked paprika
1/2 teaspoon oregano
1 cup chicken broth
Juice from one lemon, about 3 tablespoons
Zest of 1 lemon
4 tablespoons butter

Directions
Preheat oven to 400°.
Season chicken on both sides with salt and pepper.
Heat oil in a pan over medium high heat and sear chicken smooth side down for 4 minutes. Flip chicken over and cook for another 3 minutes. Remove and set aside.
Add more oil to the pan along with potatoes, onions, and garlic and season with salt and pepper. Cook for 5 minutes over medium heat.
Stir in paprika and oregano.
Add chicken broth, lemon juice and lemon zest. Season with salt and pepper, and bring to a boil.
Nestle chicken back into the pan and add butter slices.
Transfer to the oven and bake for 25 minutes.
