## **🥟 Chicken Dumplings with Chilli Oil & Dumpling Sauce**
### **Ingredients:**
#### **For the Dumpling Dough:**
- 2 cups **all-purpose flour**
- ½ tsp **salt**
- ¾ cup **warm water**
- Cornstarch (for dusting)
#### **For the Chicken Filling:**
- 250g **ground chicken**
- 1 tbsp **soy sauce**
- 1 tsp **oyster sauce** (optional)
- ½ tsp **sesame oil**
- 1 tsp **ginger** (grated)
- 1 **garlic clove** (minced)
- 2 tbsp **spring onions** (chopped)
- ¼ tsp **black pepper**
- ½ tsp **salt**
#### **For the Chili Oil:**
- ½ cup **oil (vegetable or sesame)**
- 1 tbsp **red chili flakes**
- ½ tsp **Sichuan peppercorns** (optional)
- 1 **garlic clove** (minced)
- ½ tsp **soy sauce**
- ½ tsp **sugar**
- ½ tsp **salt**
#### **For the Dumpling Sauce:**
- 2 tbsp **soy sauce**
- 1 tbsp **vinegar (rice or white vinegar)**
- ½ tsp **sesame oil**
- ½ tsp **sugar**
- 1 tsp **chili oil (from above)**
- ½ tsp **garlic (minced)**
- 1 tsp **spring onions** (chopped)

### **Instructions:**
#### **Step 1: Prepare the Dough**
1. In a bowl, mix flour and salt. Gradually add warm water while kneading until a soft dough forms.
2. Cover and let it rest for **30 minutes**.
#### **Step 2: Make the Chicken Filling**
1. In a bowl, mix ground chicken with soy sauce, oyster sauce, sesame oil, ginger, garlic, spring onions, black pepper, and salt.
2. Stir well and refrigerate for **15-20 minutes**.
#### **Step 3: Roll & Fill the Dumplings**
1. Divide the dough into small portions and roll into thin circles.
2. Place **1 tsp of filling** in the center of each wrapper.
3. Fold into a half-moon shape, pressing the edges together to seal. Use water to help seal if needed.
#### **Step 4: Cook the Dumplings**
**Option 1: Pan-Fried Dumplings (Potstickers)**
1. Heat **1 tbsp oil** in a non-stick pan.
2. Place dumplings in the pan and cook until the bottoms turn golden brown.
3. Add **¼ cup water**, cover with a lid, and steam for **5 minutes** until the filling is cooked.
**Option 2: Steamed Dumplings**
1. Place dumplings in a steamer lined with parchment paper.
2. Steam for **10-12 minutes** until the dumpling skin turns translucent.
**Option 3: Boiled Dumplings**
1. Boil water in a pot and add dumplings.
2. Cook until they float to the top (**5-6 minutes**).
