Hyderabadi Dalcha is a traditional dish made with mutton (or chicken), lentils, and bottle gourd (lauki), flavored with aromatic spices. It is often served with bagara rice or plain rice. Here’s a **Dawat-style Hyderabadi Dalcha** recipe:

### **Ingredients:**
#### **For Dal:**
- 1 cup Toor Dal (Arhar Dal)
- ½ cup Chana Dal
- 1 small Bottle Gourd (Lauki), chopped
- ½ tsp Turmeric Powder
- 1 tsp Salt
- 4 cups Water

#### **For Mutton Curry:**
- 500g Mutton (with bones)
- 2 tbsp Oil or Ghee
- 2 Onions, sliced
- 1 Tomato, chopped
- 1 tbsp Ginger-Garlic Paste
- 1 tsp Red Chili Powder
- ½ tsp Turmeric Powder
- 1 tsp Coriander Powder
- ½ tsp Garam Masala
- 1 tsp Cumin Seeds
- 1-2 Green Chilies, slit
- 1 small piece Tamarind (soaked in water)
- Salt to taste
- Fresh Coriander & Mint leaves

### **Instructions:**

#### **Step 1: Cook the Dal**
1. Wash the toor dal and chana dal together.
2. In a pressure cooker, add the dals, chopped bottle gourd, turmeric, salt, and 4 cups of water.
3. Cook for 3-4 whistles until the dal becomes soft. Mash it and set aside.

#### **Step 2: Cook the Mutton**
1. Heat oil in a pan, add cumin seeds.
2. Add sliced onions and sauté until golden brown.
3. Add ginger-garlic paste and fry for a minute.
4. Add chopped tomatoes, red chili powder, turmeric, coriander powder, and salt. Cook until the oil separates.
5. Add the mutton pieces and sauté for 10 minutes.
6. Add 1-2 cups of water, cover, and cook until the mutton is tender.

#### **Step 3: Combine Dal & Mutton**
1. Add the cooked dal to the mutton mixture. Mix well and let it simmer.
2. Add tamarind pulp and adjust salt & spices as needed.
3. Cook for another 10 minutes on low flame until flavors blend well.
4. Sprinkle garam masala, add chopped coriander & mint leaves.

### **Serving Suggestion:**
Serve hot with **Bagara Rice, Zeera Rice, or Plain Rice** for an authentic Hyderabadi taste.
