Hello, friends! It’s cheese-making day at Hamilton Homestead, and today I’m making Parmesan cheese, our most popular variety. Parmesan is a true labor of love—it takes at least 12 months to age before we get to enjoy it! They say, “Cheese, the Original Slow Food,” and this process proves it.

In this video, I walk you through all 8 stages of making Parmesan, from sanitizing equipment to pressing and brining the wheel.
