**Ingredients:**
- 500 grams boneless mutton, cut into small cubes
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- ½ teaspoon turmeric powder
- 1 teaspoon coriander powder
- Salt to taste
- Juice of half a lemon
- 6-7 green chilies, slit
- 1 tablespoon dried fenugreek leaves (kasuri methi)
- Oil for shallow frying
**Instructions:**
1. **Marinate the Mutton:**
- In a bowl, combine mutton cubes with ginger-garlic paste, red chili powder, turmeric powder, coriander powder, salt, and lemon juice. Mix thoroughly to ensure even coating. Let it marinate for at least 30 minutes to absorb the flavors.
2. **Cook the Mutton:**
- Heat oil in a pan over medium heat. Add the marinated mutton pieces and cook until they are tender and the moisture evaporates. This process ensures the mutton is cooked through before frying.
3. **Fry the Mutton:**
- Once the mutton is cooked and the moisture has evaporated, increase the heat to medium-high. Add slit green chilies and dried fenugreek leaves to the pan. Fry the mutton pieces until they attain a crispy texture and a rich brown color. Stir occasionally to prevent sticking and ensure even frying.
4. **Serve:**
- Once fried to perfection, remove the mutton pieces from the pan and place them on a paper towel to absorb excess oil. Serve hot as an appetizer or alongside Hyderabadi dal and rice for a complete meal.
