A fragrant and flavorful Mutton Biryani made with tender mutton, aromatic basmati rice, and a blend of rich spices!

Ingredients:

For Marination:

• 500g mutton (goat/lamb), cut into pieces
• 1 cup yogurt
• 1 tbsp ginger-garlic paste
• 1 tsp red chili powder
• 1/2 tsp turmeric powder
• 1 tsp garam masala
• 1 tsp salt
• 1 tbsp lemon juice

For Rice:

• 2 cups basmati rice (soaked for 30 minutes)
• 4 cups water
• 2-3 cloves
• 2-3 green cardamoms
• 1-inch cinnamon stick
• 1 bay leaf
• 1 tsp salt

For Biryani Masala:

• 2 tbsp oil/ghee
• 2 onions, thinly sliced
• 1 tomato, chopped
• 1 tbsp biryani masala
• 1/2 tsp cumin powder
• 1/2 tsp coriander powder
• 1/2 cup milk (optional)
• 1/4 tsp saffron strands (soaked in warm milk)
• 2 tbsp chopped coriander leaves
• 2 tbsp chopped mint leaves

Instructions:

Step 1: Marinate the Mutton

1. In a bowl, mix mutton with yogurt, ginger-garlic paste, chili powder, turmeric, garam masala, salt, and lemon juice.
2. Cover and let it marinate for at least 2 hours (preferably overnight for best flavor).

Step 2: Cook the Rice

1. In a pot, boil water and add whole spices (cloves, cardamom, cinnamon, bay leaf) and salt.
2. Add the soaked rice and cook until it’s 70% done. Drain and set aside.

Step 3: Prepare the Mutton Masala

1. Heat oil/ghee in a pan and fry sliced onions until golden brown. Remove half for garnish.
2. Add chopped tomatoes, biryani masala, cumin powder, and coriander powder. Cook until tomatoes turn soft.
3. Add marinated mutton and cook until the meat is tender (add water if needed).

Step 4: Layering the Biryani

1. In a heavy-bottomed pan, layer half the cooked rice, followed by the mutton masala.
2. Sprinkle coriander, mint, and some saffron milk.
3. Add the remaining rice and top with fried onions and more saffron milk.
4. Cover the pot with a tight lid and cook on low heat (Dum) for 20-25 minutes.

Step 5: Serve & Enjoy!

• Gently mix the biryani before serving.
• Serve hot with raita, boiled eggs, or salan.
