Breakfast Hashbrown Tostadas on the Blackstone Griddle

Ingredients
½ pound bacon
½ pound sausage
4-6 thawed hash brown patties
½ cup salsa
4-6 eggs
1-2 teaspoons Blackstone Essentials Seasoning
1 teaspoon Blackstone Spicy Brown Sugar
1 tablespoon bacon grease (or substitute with butter or oil)
1 teaspoon Blackstone Hatch Green Chile Seasoning
1 teaspoon butter
Green onion tops (optional, for garnish)
1 tablespoon Cotija cheese (optional, for garnish)

Directions
1. Preheat your griddle on low heat.

2. Place the bacon onto the griddle and cook until your desired level of crispiness.

3. Once the bacon is cooked, move it to a cooler area of the griddle. Place the sausage on the griddle and smash them flat with parchment paper.

4. While the sausage is cooking, place the thawed hash brown patties onto the area where the bacon was cooking. Let them cook in the bacon grease for about 3-4 minutes.

5. Smash the hash browns flat, then flip them over. Season with Blackstone Essentials and cook for an additional 3-5 minutes until crispy and golden.

6. In the remaining bacon grease or in a bit of butter, cook the eggs to your preference (over easy works great for this dish).

7. Assemble the tostadas: Start with a crispy hash brown patty, then layer with sausage, bacon, and a cooked egg. Sprinkle with Blackstone Hatch Green Chile Seasoning and add salsa and avocado. Top with Cotija cheese.

8. Garnish with green onion tops (optional) and serve immediately. Enjoy!
