Egg Curry & Chapati Recipe

Ingredients for Egg Curry:

• 4 boiled eggs
• 1 onion, finely chopped
• 1 tomato, pureed
• 1 tbsp ginger-garlic paste
• 1 green chili, chopped (optional)
• 1/2 tsp turmeric powder
• 1 tsp red chili powder
• 1 tsp coriander powder
• 1/2 tsp cumin powder
• 1/2 tsp garam masala
• 1/2 tsp black pepper powder
• 1/2 cup coconut milk or water (optional, for a rich gravy)
• 1 tbsp oil or ghee
• Salt to taste
• Fresh coriander for garnish

Instructions:

1. Heat oil in a pan, add chopped onions, and sauté until golden brown.
2. Add ginger-garlic paste and green chili, sauté for a minute.
3. Add tomato puree and cook until the oil separates.
4. Add all the dry spices (turmeric, chili powder, coriander, cumin, black pepper) and mix well.
5. Pour in coconut milk or water, let the curry simmer for 5 minutes.
6. Add boiled eggs (you can slightly slit or fry them for extra flavor).
7. Simmer for another 5 minutes, then sprinkle garam masala and garnish with fresh coriander.

Ingredients for Chapati:

• 2 cups whole wheat flour
• 3/4 cup water (adjust as needed)
• 1/2 tsp salt
• 1 tsp oil (optional)

Instructions:

1. Mix flour, salt, and water to form a soft dough. Let it rest for 15-20 minutes.
2. Divide into small portions and roll into thin circles.
3. Heat a tawa or pan, cook each chapati for 30-40 seconds on each side until golden spots appear.
4. Brush with ghee (optional) and serve hot with egg curry.
