Healthy Mutton Paya Soup Recipe

Ingredients:

• 4-5 mutton trotters (paya), cleaned
• 1 onion, chopped
• 1 tomato, chopped
• 1 tbsp ginger-garlic paste
• 1 tsp turmeric powder
• 1 tsp black pepper powder
• 1/2 tsp cumin powder
• 1/2 tsp coriander powder
• 1 small cinnamon stick
• 2-3 cloves
• 2-3 green cardamoms
• 1 bay leaf
• 1 tbsp ghee (or olive oil for a lighter version)
• Salt to taste
• 6-7 cups water
• Fresh coriander and lemon for garnish

Instructions:

1. Clean the Paya: Wash the mutton trotters thoroughly. You can blanch them in boiling water for 5 minutes to remove any impurities.
2. Sauté the Aromatics: Heat ghee in a pressure cooker or a deep pot. Add cinnamon, cloves, cardamom, and bay leaf. Sauté for a few seconds, then add onions and cook until golden.
3. Cook the Spices: Add ginger-garlic paste and sauté until fragrant. Add tomatoes, turmeric, cumin, coriander, and black pepper powder. Cook until tomatoes soften.
4. Add Paya & Water: Add the cleaned paya and mix well. Pour in water and season with salt.
5. Pressure Cook: Cook for about 45 minutes to 1 hour (or 3-4 hours on a slow simmer if using a regular pot) until the trotters are tender and the broth is rich.
6. Final Touch: Strain the soup if desired. Garnish with fresh coriander and a squeeze of lemon. Serve hot!
