SUGAR FREE COCONUT COOKIES
1 cup Trim Healthy Mama Baking Blend
1 cup unsweetened coconut flakes
1/3 cup Trim Healthy Mama Gentle Sweet
1/2 tsp baking powder
1/2 tsp salt
Mix together and set aside

4 oz cream cheese, softened to room temperature
1/2 cup coconut oil
1/4 cup almond milk
1 tsp vanilla extract
1 tsp coconut extract
Cream together and add 4 eggs one at a time

On a low to medium speed add the dry ingredients one heaping spoonful at a time. Do not overmix

We used a medium sized cookie scoop to place them onto a cookie sheet.
Tap the cookie sheet on the counter to help flatten the cookies before baking. Bake on 360 for 15-17 minutes

OATMEAL RAISIN BREAKFAST COOKIE
Use a food processor
2 cups rolled oats - run in the processor to break the oats down a bit
Add:
3/4 cup plain greek yogurt
1 egg
3/4 tsp vanilla extract
1/4 tsp salt
1 1/2 tsp baking powder
2 TBLS honey
2 cup sliced bananas that are still partially frozen

Mix well.
Let the batter rest at room temperature for 2-3 hours
Fold in 1/2 cup raisins (or whatever you choose)
