Mint sauce: 1 tablespoon granulated sugar, 1/4 teaspoon kosher salt, 3 tablespoons white wine vinegar, 1 cup fresh mint leaves, finely chopped

Lamb roast: leg of lamb , bone in, Salt and pepper, 1.5 tbsp olive oil, 1 whole garlic head , unpeeled, cut in half horizontally, 1 onion , quartered (unpeeled is fine), 2 rosemary sprigs, 750 ml beef stock/broth , 500 ml water, Roast in the oven at 170°C/335°F (standard) or 150°C (fan). 2kg lamb-4.5 hours.

Waffles for the little one: 3/4 cup AP flour, 1 tbsp sugar, 1 teaspoon baking powder, 1/2 teaspoon table salt, 1/2 cup whole-fat buttermilk, room temperature*, 1 large egg, 2 tablespoons melted unsalted butter, 1/4 teaspoon vanilla extract, 1/2 cup mix-ins such as chocolate chips or blueberries
