Ingredients:
2 cups fresh strawberries (washed and hulled)
1 cup heavy cream
1/2 cup whole milk
1/2 cup honey or natural sweetener (adjust to taste)
1 teaspoon pure vanilla extract
1 tablespoon lemon juice (to enhance flavor)
A pinch of salt
Step-by-Step Instructions:
Step 1: Prepare the Strawberries
Start by washing and hulling the strawberries, then slice them into smaller pieces. Place the strawberries in a bowl and add the lemon juice and half of the sweetener. Let them sit for about 15 minutes to allow the natural juices to release. This helps intensify the strawberry flavor.
Step 2: Blend the Ingredients
Transfer the macerated strawberries into a blender or food processor. Add the heavy cream, whole milk, vanilla extract, salt, and the remaining sweetener. Blend until smooth for a creamy texture. If you prefer a chunkier ice cream, blend only part of the strawberries and leave some pieces intact.

Step 4: Churn the Ice Cream
With an Ice Cream Maker: Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions. This usually takes about 20-30 minutes.
Without an Ice Cream Maker: Pour the mixture into a shallow dish and freeze. Every 30 minutes, stir vigorously with a fork or whisk to break up ice crystals. Repeat this process until the ice cream reaches a creamy consistency (about 3-4 hours).
Step 5: Freeze Until Firm
Once the ice cream reaches a soft-serve consistency, transfer it to a lidded container and freeze for at least 4 hours or overnight for a firmer texture.
