Once the butter has separated, you should notice that the clear liquid has separated. You should also notice the milk solid at the bottom of the pan. By now you should have skimmed off the foam that floats to the top. It’s time to can up the clear liquid, that’s what you want to can, that’s the ghee.
I can in 1/2 pints. Strain it through a flour towel, using a strainer for support. This just gets any additional solids to make it as clear and clean to can a beautiful product. Try not to disturb the milk solid at the bottom of the pan. You don’t want to can any of that. Fill the jar, to 1” headspace.
