Lentil Soup - unfinished

How to make an amazing Vegan Lentil Soup. Still need to add titles and music.

Recipe for human sized portions:

INGREDIENTS
2 Lbs. Lentils
2.5 Cups Celery, diced
2.5 Cups Carrots, diced
2.5 Cups White Onion, diced
4-5 Cloves Garlic, minced
2 Cups White Potatoes, diced
1.5 Cups Green Peppers, diced
1.5 Cups Fresh Fennel, diced (optional, but a very nice
addition)
2 Cups Fresh Spinach, chopped (also optional, but like the
fennel, a very nice addition)
1 28 oz. Can San Marzano Tomatoes, pureed
10 Cups Water
3-4 Bay Leaves
1/3 Cup Extra Virgin Olive Oil
1-2 Tsp. Salt
3/4 Tsp. Black Pepper
1/2 Tsp. Thyme Leaves
3/4 Tsp. Oregano
1/4 Cup Fresh Basil, chopped

DIRECTIONS
Prepare Vegetables
Peel, rinse, and prepare vegetables for dicing
Dice everything except Potatoes, small, approximately 1/4 inch in size, place in bowl
and set aside.
Dice potatoes and set in enough water to cover, set aside.
Mince garlic
Rinse and towel dry Basil. Chop it fine and put into a small bowl, set aside.
Optional - Chop spinach, set aside
Optional - Dice Fennel, add to bowl with the rest of the veggies
Making the Soup
In a very large sauce pot, add Olive Oil and put on a Medium High flame, allow to
heat up. Add garlic and stir.
Cook garlic until it starts to lightly brown.
Add all veggies, except the Potatoes, and stir frequently.
Cook vegetables until onions are translucent.
Add water, and turn the heat to High.
Add bay leaf.
Bring the soup to a boil. Once boiling, cook for 20 minutes on high.
Add Tomatoes, Potatoes, and optional Spinach, stir, and allow it to come back up to
a boil, remaining on High for another 20 minutes.
Add lentils, stirring completely. Reduce heat to medium to medium low to achieve a
low simmer..
Stir the soup every few minutes, scraping along the bottom, making sure the lentils
are not sticking to the bottom. Those pesky lentils love to stick to the bottom and
burn... Keep Stirring!!!
Cook the soup for another 1.5 hours, stirring constantly.
Remove from heat and add seasonings and spices. Taste and check the seasoning.
With the salt, it is always best to start with 1 Tsp. Continue to add additional salt until
it is where you like it.
