🍚 Authentic Rice & Peas Recipe
Ingredients:

2 cups long-grain rice (preferably basmati or jasmine)
1 can (13.5 oz) coconut milk
1 cup canned or cooked kidney beans (or pigeon peas)
2 cups water or vegetable broth
2 cloves garlic, minced
2 sprigs fresh thyme (or 1 tsp dried thyme)
2 scallions, chopped
1 Scotch bonnet pepper (whole, for flavor without too much heat)
1 tsp allspice
Salt and black pepper to taste
1 tbsp butter or coconut oil (optional, for richness)
Instructions:

Rinse rice under cold water until the water runs clear.
In a pot, combine coconut milk, water (or broth), garlic, thyme, scallions, and Scotch bonnet pepper. Bring to a boil.
Add rice, kidney beans, allspice, salt, and black pepper. Stir well.
Cover and reduce heat to low. Simmer for 20-25 minutes or until rice is tender and liquid is absorbed.
Remove Scotch bonnet pepper and thyme stems. Fluff rice with a fork and add butter or coconut oil if desired.
