The Dowager Countess's Restorative Broth

Hello!! Sorry it's late!!!
RECIPE:
Broth:
1 Chicken Carcass
1 Yellow onion, peeled and quartered
4 large carrots, peeled (oops!) and cut in half
1 garlic bulb, sliced in half
6 whole peppercorns
4 celery ribs with leaves, cut in half
8-10 sprigs fresh thyme
8-10 sprigs italian parsely
1 bay leaf
1 gallon spring water or filtered water
Soup:
2 quarts chicken stock (From recipe above)
2 chicken breasts, skin on bone in olive oil (or a 2-4 lb whole chicken)
2 large carrots, sliced into rounds
2 ribs celery, sliced, with leaves
1 TBSP Kosher salt
1 TBSP Rosemary, chopped
1 whole garlic clove, peeled
3 TBSP Italian Parsely, chopped
1/2 tsp of fresh pepper, or to taste
2 cups egg noodles
Egg noodle recipe:
2 1/2 cups flour
1 pinch salt
2 large eggs, beaten
1/2 cup milk
1 TBSP butter
