Pre-soaked rice stick noodles keep this a single pan operation. Light lemon and miso flavored sauce fortified with hearty winter root vegetables, rutabagas and parsnips. Heavy cream will mellow out the parsnips rounding out the dish. You could garnish with Parmigiano Reggiano and go that route, but we kept things clean and light and woke it up with some Thai sweet soy at the end. We both think the ABC Soy sauce and chili oil took this way over the top.

Rice Stick Noodle Miso Fettuccine

4 boneless chicken thighs
2 garlic cloves
1t soy sauce
1/2t kosher salt
1/4t white pepper
1T sake
1 rutabaga
1 lg parsnip
14oz wide rice stick noodles
1 yellow onion
2t avocado oil
2c water
1c heavy cream
1/4c white miso paste
4” lemon peel
1/2 t sesame oil
Thai sweet soy
