Lasagna soup has all the traditional flavors of a lasagna, but in the form of a soup. This cozy version involves a no layering with minimal prep work and the best part is my family just loves it! And I know you will love it too!

Lasagne Soup

Ingredients
1 lb ground beef
1 onion, diced
4 garlic cloves, minced
6 tablespoons tomato paste
28 oz can crushed tomatoes
4 cups chicken broth
1 1/2 teaspoons dried basil
1 1/2 teaspoons dried oregano
2 cups shredded mozzarella cheese
3/4 lb rigatoni noodles, cooked according to the package
Optional- parmesan cheese, red pepper flakes

Directions
Heat oil in a pan over medium high heat and brown ground beef.
Add onions and garlic, season with salt and cook for 3 minutes.
Add tomato paste, Crushed tomatoes, chicken broth, dried basil, and dried oregano. Seasoning really well with salt and pepper and brain to boil. Lower heat to medium low and let simmer for 15 minutes.
To serve, place noodles into a bowl, top with mozzarella cheese and ladle over hot soup (while it’s still simmering to ensure that cheese will melt). Sprinkle over Parmesan cheese and red pepper flakes if desired.
