Blueberry Stuffed French Toast | Blackstone Griddles
Betty's Blueberry vanilla cream cheese stuffed French toast bites are to die for! They are cooked on the Blackstone griddle and topped with fresh berries, powdered sugar, and lemon zest. A quick, rich, and flavorful breakfast.

Ingredients
12 oz (1 pack) King's Hawaiian Slider Rolls
Butter for frying
Fresh blueberries (for garnish)
Zest of a lemon (for garnish)
Powdered sugar (for garnish)
8 oz Philadelphia Whipped Cream Cheese
4 oz Blueberry Jam
½ tbsp Fresh Lemon Juice
¼ cup Powdered Sugar
½ tsp Vanilla Extract
4 Eggs
¼ cup French Vanilla Coffee Creamer
2 tbsp Cinnamon
2 tbsp Sugar
1 tsp Vanilla Extract
Directions
In a mixing bowl, combine whipped cream cheese, blueberry jam, lemon juice, powdered sugar, and vanilla extract, then transfer the mixture into a piping bag or a storage bag with a corner cut off.
Carefully cut a small hole in the side of each slider bun and pipe in the filling. These can be refrigerated ahead of time to firm up the filling before cooking.
In a large mixing bowl, whisk together eggs, French vanilla coffee creamer, cinnamon, sugar, and vanilla extract until well combined.
Preheat the griddle to medium to medium-low heat and add butter.
Dip each filled slider into the batter, ensuring even coating, then place them onto the melted butter. Cook until golden brown on all sides, using tongs to rotate as needed.
Plate the sliders and garnish with a dusting of powdered sugar, lemon zest, and fresh blueberries. Serve and enjoy!
