Eggs are to expensive and hard to find, making substitutes a practical choice.
There are plenty of great egg substitutes, depending on what you're making! Here are some alternatives based on different needs:
For Baking (Cakes, Muffins, Cookies, etc.)
Applesauce – ¼ cup per egg (adds moisture, best for cakes & muffins)
Mashed Banana – ¼ cup per egg (adds sweetness & density, best for brownies & pancakes)
Ground Flaxseed + Water – 1 tbsp flaxseed + 3 tbsp water (best for cookies & quick breads)
Chia Seeds + Water – 1 tbsp chia seeds + 3 tbsp water (similar to flaxseed, adds slight crunch)
Yogurt or Buttermilk – ¼ cup per egg (adds moisture, best for soft cakes & muffins)
Silken Tofu – ¼ cup per egg (great for dense cakes & brownies)
Carbonated Water – ¼ cup per egg (adds lightness, great for fluffy cakes)
For Cooking (Scrambles, Omelets, etc.)
Tofu Scramble – Crumbled tofu sautéed with turmeric & seasoning
Chickpea Flour Batter – ¼ cup chickpea flour + ¼ cup water (makes a great omelet substitute)
Just Egg (Plant-Based Substitute) – A ready-to-use liquid egg alternative
For Binding (Burgers, Meatballs, etc.)
Mashed Potatoes – ¼ cup per egg (holds ingredients together well)
Breadcrumbs + Milk or Water – A few tablespoons to bind meat or veggie burgers
