1. **Prepare the Sponge Cake:**

- Place a mixing bowl over a larger bowl filled with ice cubes to keep it chilled.
- Add the chilled cream to the bowl and beat well.
- Add icing sugar and continue to beat until soft peaks form (about 8-10 minutes).
- Transfer the whipped cream to a piping bag and refrigerate until use.
3. **Prepare the Sugar Syrup:**
- In a jug, combine hot water and sugar, stirring until the sugar dissolves completely.
- Let the syrup cool to room temperature.
4. **Assemble the Pastry:**
- Trim a thin layer from the top of the cooled sponge cake using a serrated knife, then horizontally slice the cake into two equal layers.
- Place the bottom layer on a serving platter and brush it generously with the cooled sugar syrup.
- Pipe a layer of whipped cream over the soaked sponge, then spread a layer of cherry jam evenly on top.
- Sprinkle with the strained fruit cocktail and chocolate chips.
- Place the top layer of the sponge cake over the filling and press down gently.
- Brush the top layer with the remaining sugar syrup.
- Frost the entire cake with the remaining whipped cream, smoothing it evenly over the top and sides.
