- **½ cup jaggery (gur), finely chopped**
- **1 tbsp ghee**
- **¼ tsp cardamom powder (elaichi)**
- **2 tbsp water**
- **½ tsp lemon juice (prevents crystallization, optional)**
- **Chopped pistachios or almonds (optional, for garnish)**

### **Instructions:**
#### **Step 1: Dry Roasting the Sesame Seeds**
1. Heat a pan on **low flame** and dry roast **sesame seeds** until they turn light golden and aromatic (**2-3 minutes**).
2. Stir continuously to prevent burning. Remove and set aside.
#### **Step 2: Preparing the Jaggery Syrup**
1. In the same pan, add **ghee**, **jaggery**, and **water**.
2. Cook on low flame until the jaggery melts completely.
3. Add **lemon juice** and cook until it reaches a **soft ball stage** (if dropped in cold water, it forms a firm ball).
4. Add **cardamom powder** and mix well.
#### **Step 3: Mixing & Setting the Chikki**
1. Quickly add the **roasted sesame seeds** to the jaggery syrup and mix well.
2. Immediately pour the mixture onto a **greased surface or parchment paper**.
3. Use a rolling pin (greased with ghee) to flatten it evenly to your desired thickness.
4. While still warm, cut into squares or diamonds using a knife.
5. Let it cool completely before breaking into pieces.
