Fresh Milled Flour Wheat Bread made two ways - Zojirushi Bread Machine vs Oven
Started a journey of only eating 100% Freshly Milled Flour. When I broke my wrist, I purchased a bread machine to help me make my bread. Is the machine or the oven the better way to bake wheat bread?
Soft and Hearty Whole Wheat Bread
2 lb loaf
300g Water
100g milk/buttermilk
1 Tbsp honey
10g yeast
355g Whole Wheat flour
**Mix quickly and let sit, covered 30-60 minutes this is the Autolyse
79g honey
54g soft butter
2 tsp apple cider vinegar
217g. Whole Wheat flour
**Grind a bit more in case the dough is too wet about 50 grams (1/4 cup)
2 tsp salt
3 Tbsp vital wheat gluten
**If kneading in a mixer, knead for 12 minutes.
**Cover and let rise 45-60 minutes
**shape and add to a baking pan, cover and let rise 45-60 minutes.
BAKE 350ºF 45 minutes, make sure internal temperature should be 200ºF
