Wild Game Dinner

Got inspired by @meateater @steverinella and thought I would have a wild game feast of my own.

Our hunting season went incredible this year. My boyfriend filled both of his limited tags for elk and deer, we were able to fit in some grouse hunting and were very successful, and of course I always save a couple trout in the freezer for smoking. We also have a large garden and our squash harvest was insane this year! I wanted to celebrate the bounty and throw a dinner party. Here is everything I made:

Elk backstrap “steak bar” with three sauces to try: cowboy butter anchovy gremolata, and a pistachio chili vinaigrette.

Elk summer sausage charcuterie board with homemade marinated prosciutto stuffed olives, homemade peach jalapeno jam with peaches we grew on our tree, and assortment of cheeses, and crackers.

Mule deer sliders topped with caramelized onions and black garlic aioli.

Smoked trout dip.

Grouse jalapeño poppers.

Butternut squash risotto

The most rewarding part of hunting, fishing, and gardening is being able to put the cleanest, highest quality food on the table. It is so fulfilling to put in the work, spend so much time outside, and bring this home to share with friends and family. Excited to share upcoming 2025 hunting season.
