**Ingredients:**
*For the Beef Marinade:*
- Beef mix boti: 1 kg
- Raw papaya paste: 3-4 tablespoons
- Yogurt (whisked): 1½ cups
- Ginger garlic paste: 3 tablespoons
- Green chili paste: from 7-8 green chilies
- Mint leaves: a handful
- Fresh coriander: a handful
- Lemon juice: 3-4 tablespoons
- Salt: 1 tablespoon (or to taste)
- Roasted and crushed cumin seeds: 1 tablespoon
- Red chili powder: 1½ tablespoons (or to taste)
- Turmeric powder: 1 teaspoon
- Crushed fennel seeds: ½ teaspoon
- Garam masala powder: ½ tablespoon
- Green cardamom: 7-8
- Black peppercorns: ½ teaspoon
- Cinnamon sticks: 2-3
- Coriander powder: 1 tablespoon
- Bay leaves: 3-4
- Fried onions: 1 cup
*For Cooking:*
- Cooking oil: ½ cup
- Cumin seeds: 1 tablespoon
- Black cardamom: 2
- Cinnamon stick: 1
- Black peppercorns: ½ teaspoon
- Chopped tomatoes: 2 medium
*For the Rice:*
- Basmati rice: 750 grams
- Salt: 2 tablespoons (or to taste)
- Whole spices (black cardamom, cinnamon stick, black peppercorns, cloves, bay leaves)
*For Layering:*
- Fresh coriander: chopped
- Mint leaves: chopped
- Green chilies: sliced
- Yellow food color: dissolved in milk
- Fried onions
- Garam masala powder
- Kewra water
**Instructions:**
1. **Marinate the Beef:**
- In a bowl, combine beef pieces with raw papaya paste and mix well. Cover and marinate for 1 hour.
- In a separate bowl, blend green chilies, mint leaves, fresh coriander, and lemon juice to form a paste.
- Add this paste to the marinated beef along with whisked yogurt, ginger garlic paste, salt, roasted cumin seeds, red chili powder, turmeric powder, crushed fennel seeds, garam masala powder, green cardamom, black peppercorns, cinnamon sticks, coriander powder, bay leaves, and fried onions. Mix thoroughly.
- Cover and marinate for an additional 2 hours or refrigerate overnight for best results.
2. **Prepare the Beef Curry:**
- In a large pot, heat cooking oil over medium heat. Add cumin seeds, black cardamom, cinnamon stick, and black peppercorns. Sauté for a few seconds until aromatic.
- Add the marinated beef mixture and cook on high heat for 10-15 minutes, stirring occasionally.
- Add chopped tomatoes, mix well, cover, and cook on low heat until the beef is tender and the oil separates from the gravy. Stir occasionally to prevent sticking.
3. **Prepare the Rice:**
- Rinse basmati rice thoroughly and soak for 30 minutes.
- In a large pot, bring water to a boil. Add salt and whole spices.
- Add the soaked rice and cook until 70-80% done. Drain and set aside.
4. **Layering and Final Cooking:**
- In the pot with the cooked beef curry, layer half of the partially cooked rice over the beef.
- Sprinkle chopped fresh coriander, mint leaves, sliced green chilies, fried onions, a pinch of garam masala powder, yellow food color dissolved in milk, and a few drops of kewra water.
- Repeat the layering with the remaining rice and toppings.
- Cover the pot tightly and cook on high heat for 5 minutes, then reduce to low heat and steam (dum) for 15-20 minutes.
- Once done, gently mix the biryani layers before serving.
