- Boneless chicken thighs
- Onion (grated)
- Tomato paste
- Lemon juice
- Thick yogurt
- Red chili flakes
- Paprika powder
- Dried oregano
- Salt
- Cumin powder
- Garlic paste
- Olive oil
*For the Sauce:*
- Tomato paste
- Water
*For the Lavash Flatbread:*
- Warm water
- Caster sugar
- Instant yeast
- Whole wheat flour
- All-purpose flour
- Salt
- Cooking oil
*For Assembling:*
- Lavash bread
- Prepared sauce
- Chopped lettuce leaves
- Cooked chicken
- Potato fries
- Pickled cucumber (julienned)
- Tomato ketchup
- Mayonnaise
**Instructions:**
1. **Prepare the Chicken Marinade:**
- In a bowl, combine onion juice (squeezed from grated onion), tomato paste, lemon juice, yogurt, red chili flakes, paprika powder, dried oregano, salt, cumin powder, garlic paste, and olive oil. Mix well.
- Pat dry the chicken thighs and freeze them for 4-6 hours. Once frozen, slice them thinly.
- Marinate the sliced chicken in the prepared mixture for 30 minutes.
2. **Cook the Chicken:**
- In a frying pan, heat cooking oil and add the marinated chicken (reserving any leftover marinade). Cook on medium flame until tender and the moisture evaporates. Set aside.
3. **Prepare the Sauce:**
- In the same pan, add the reserved marinade and tomato paste. Mix well and cook for 2 minutes.
- Add water, mix, and cook for another minute. Set aside.
4. **Prepare the Lavash Flatbread:**
- In a small jug, mix warm water, caster sugar, and instant yeast. Cover and let it rest for 5-10 minutes.
- In a bowl, combine whole wheat flour, all-purpose flour, and salt. Add the yeast mixture and mix well.
- Gradually add water and knead until a dough forms. Add cooking oil and knead again until smooth. Cover and let it proof for 1 hour in a warm place.
- Divide the dough into small portions (approximately 115g each), roll into balls, and then roll out thinly using a rolling pin.
- Heat a griddle and cook the rolled dough until light golden on both sides (about 45 seconds per side). Place the cooked flatbread on a kitchen towel and cover immediately to prevent drying.
5. **Assemble the Shawarma:**
- On a piece of butter paper, place a lavash flatbread. Spread the prepared sauce, add chopped lettuce leaves, cooked chicken, potato fries, pickled cucumber, tomato ketchup, and mayonnaise. Fold the sides and roll tightly. Wrap with butter paper and serve.
