- 2.5 tablespoons lemon juice
- ¼ teaspoon salt
- 50g unsalted butter
- 2 tablespoons Olper’s cream (room temperature)

*For Cheesecake Filling:*
- 200ml chilled Olper’s cream
- 150g prepared cream cheese
- 6 tablespoons powdered sugar
- 1 tablespoon lemon juice
- ½ teaspoon mango essence

*For Biscuit Layer:*
- 140g biscuits of your choice
- 60g melted butter
- 2 tablespoons chopped almonds

**Instructions:**

*Prepare Mango Compote:*
1. In a frying pan, combine mango cubes, sugar, and lemon juice. Mix well and cook on medium flame until the sugar melts and the mixture thickens (about 2 minutes). Let it cool.

*Prepare Homemade Cream Cheese:*
1. In a wok, bring milk to a boil.
2. Add lemon juice, mix well, and cook on low flame until the milk curdles, stirring occasionally.
3. Place a strainer over a bowl, line it with muslin cloth, and pour the curdled mixture to separate the whey. Let it drain for 15 minutes.
4. In a chopper, add the drained cheese and salt; chop well.
5. Add butter and room-temperature cream; chop until well combined. Homemade cream cheese is ready (yields approximately 300g).

1. In a large bowl over ice, beat chilled cream until soft peaks form.
2. Add prepared cream cheese, powdered sugar, lemon juice, and mango essence; beat until well combined. Transfer to a piping bag.
