Lehsun Ki Chutney

Ingredients

10-12 garlic cloves (lehsun)

2-3 dried red chilies

1 medium-sized tomato (optional, for a tangy flavor)

1 tsp cumin seeds (jeera)

2 tbsp oil

1 tsp red chili powder

½ tsp salt (adjust to taste)

1 tbsp lemon juice or 1 tsp tamarind pulp (optional)

Instructions

Prepare the Garlic Base

Peel the garlic cloves and keep them ready.

Roast the Ingredients

Heat oil in a pan on medium heat.

Add cumin seeds and let them splutter.

Add dried red chilies and roast until they turn aromatic.

Add garlic cloves and sauté until golden brown.

Add Tomato (Optional)

If using tomato, chop it and add it to the pan. Cook until soft and mushy.

Grind the Chutney

Transfer the roasted mixture to a blender. Add red chili powder, salt, and a splash of water (if needed). Blend into a smooth or coarse chutney, depending on your preference.

Finish with a Tangy Twist

Add lemon juice or tamarind pulp for a tangy flavor and mix well.

Serve

Serve the chutney with parathas, dosa, vada, or as a side dip with snacks. Store in an airtight container in the fridge for up to a week.
