- 1 kg chicken (cut into medium pieces)
- 3-4 large tomatoes (roughly chopped or peeled)

- 3-4 green chilies (slit)
- 1 tbsp ginger-garlic paste
- 1 tsp crushed black pepper (adjust to taste)
- 1 tsp salt (or to taste)
- 1 tsp cumin seeds (optional, for extra aroma)
- 1/2 tsp coriander seeds, lightly crushed (optional)
- Fresh coriander leaves, chopped (for garnish)
- Ginger juliennes (for garnish)

### **Instructions**
#### **1. Heat the Oil or Ghee:**
- In a traditional karahi (or a deep skillet), heat ghee or oil on medium heat.
- Add the cumin seeds and coriander seeds (if using) and let them splutter for a few seconds.
#### **2. Add the Chicken:**
- Add the chicken pieces to the hot oil and sauté on medium-high heat for 5-7 minutes until they are lightly golden.
- Stir in the ginger-garlic paste and cook for another 2 minutes until fragrant.
#### **3. Cook the Tomatoes:**
- Add the chopped or peeled tomatoes to the chicken. Cover the pan and let it simmer for 10-12 minutes, stirring occasionally, until the tomatoes soften completely.
- Once softened, mash the tomatoes gently with the back of a spoon to create a thick gravy.
#### **4. Season the Dish:**
- Add salt and crushed black pepper. Mix well and continue cooking on medium heat until the oil separates from the gravy (about 5-7 minutes).
- Add the slit green chilies and cook for another 2-3 minutes to infuse their flavor.
#### **5. Garnish and Serve:**
- Turn off the heat and sprinkle fresh coriander leaves and ginger juliennes over the dish.
- Serve hot with naan, chapati, or steamed rice.
