Today we are cooking healthy and nutritious AWE (Avocado, Walnut and Eggs Salad) with homemade Caesar Dressing.

Prep Time - 5 - 10 mins

Cooking Time - 10 - 12 mins

Ingredients:
For Salad:
Mixed greens (romaine, spinach, arugula – your choice!)
2 hard-boiled eggs, chopped
1/2 avocado, diced
1/4 cup toasted walnuts
Croutons (optional)
Parmesan cheese, for grating

For the Caesar Dressing:
1/4 cup olive oil
2 tablespoons lemon juice
1 clove garlic, minced
1 teaspoon stone ground Mustard paste
1/4 teaspoon Soy sauce
Salt and pepper to taste

Optional:
For extra proteins - You can add grilled sliced/ shredded chicken or shrimp
For more crunch - Add red cabbage, onions, cherry tomatoes
For vegan - Add veggie mayo and omit cheese
