Canning POTATOES and saving your harvest for the winter

When you're ready to preserve your harvest or you've gathered your potatoes from the market, its time to preserve them and make them last. Canning potatoes is a great way to have them when preparing meals and they are ready to use right out of the jar. Potatoes need to be preserved using a pressure canner because they are low in acid.

We used 10 pounds of potatoes which yielded 7 quarts.
Quick tip: Do not pound down the jar and try to put more potatoes in it. It will mash them on the bottom and create cloudy water.
