- Green cardamom: 4
- Cinnamon stick: 1-inch
- Cloves: 6
- Black peppercorns: 10
- Fennel seeds: 1 tbsp
- Coriander seeds: 1 tbsp
#### For the Pulao:
- Basmati rice: 1 kg (washed and soaked for 30 minutes)
- Onions: 4 large (thinly sliced)
- Tomatoes: 3 medium (chopped)
- Green chilies: 4–5 (slit)
- Ginger-garlic paste: 2 tbsp
- Yogurt: 1 cup (whisked)
- Cooking oil or ghee: 1 cup
- Cumin seeds: 1 tsp
- Whole spices:
- Black cardamom: 2
- Green cardamom: 4
- Cloves: 4
- Cinnamon stick: 1-inch
- Salt: 1.5 tsp (adjust to taste)
- Black pepper powder: 1 tsp
- Coriander powder: 1 tsp
- Garam masala powder: 1 tsp
- Fresh coriander: ½ cup (chopped)

#### Step 1: Prepare the Beef Stock
1. In a large pot, add beef, water, and all the stock ingredients.
2. Bring to a boil, then reduce heat and simmer for 1–1.5 hours until the beef is tender.
3. Strain the stock and set aside the beef pieces. Discard the whole spices and residues.
#### Step 2: Cook the Pulao
1. Heat oil or ghee in a large pot. Add the sliced onions and fry until golden brown. Remove half of the fried onions for garnishing.
2. Add cumin seeds, whole spices, and ginger-garlic paste. Sauté for a minute until fragrant.
3. Stir in the chopped tomatoes and cook until they soften. Add yogurt, salt, black pepper powder, coriander powder, and garam masala. Mix well.
4. Add the cooked beef pieces and sauté for 5–7 minutes to coat the beef with the masala.
5. Pour in the reserved beef stock (double the quantity of rice—2 liters for 1 kg rice). Bring it to a boil.
6. Drain the soaked rice and gently add it to the pot. Stir carefully to mix.
#### Step 3: Simmer the Pulao
1. Cover the pot and cook on medium-high heat until most of the water is absorbed.
2. Reduce the heat to low, cover the lid tightly (use a damp cloth to seal, if needed), and let it cook on **dum** for 20–25 minutes.
3. Turn off the heat and let it rest for 10 minutes before opening the lid.

1. Fluff the rice gently with a fork.
2. Garnish with the reserved fried onions, chopped coriander, and mint leaves.
3. Serve hot with raita, salad, and green chutney.
