Instructions:

Prepare the Dough:

In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
In a large bowl, mix flour and salt. Add the yeast mixture and olive oil.
Knead the dough for about 8-10 minutes (or 5 minutes in a stand mixer) until smooth and elastic.
Shape into a ball, cover, and let it rest for 1-2 hours, or until it doubles in size.
Make the Sauce:

In a bowl, mix passata, olive oil, salt, sugar, black pepper, and oregano. Set aside.
Shape the Dough:

Preheat your oven to its highest setting (250°C/480°F if possible). Place a mesh baking tray or pizza stone in the oven to heat.
Divide the dough into two balls. Roll each one out on a floured surface, keeping a slightly thicker edge for the crust.
Assemble the Pizza:

Sprinkle some cornmeal on the hot mesh baking tray or pizza stone.
Transfer the dough to the tray. Spread a thin layer of pizza sauce over the base.
Add mozzarella, fresh mozzarella, and Pecorino Romano. Add any other desired toppings.
Bake:

Bake the pizza in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly, and the crust is golden and crispy.
Finish and Serve:

Remove from the oven and top with fresh basil leaves. Drizzle with olive oil if desired.
