Rabadi Sev Katori is a delightful fusion dessert that combines creamy rabadi (sweetened condensed milk) with crispy sev (vermicelli) shaped into katoris (cups). Here's how you can prepare this indulgent treat at home:
**Ingredients:**
*For the Sev Katoris:*
- 1 cup sev (thin vermicelli)
- 2 tablespoons ghee (clarified butter)
- 2 tablespoons sugar syrup (optional, for sweetness)
*For the Rabadi:*
- 1 liter full-fat milk
- 1/2 cup sugar (adjust to taste)
- 1/2 teaspoon cardamom powder
- A few strands of saffron (optional)
- Chopped nuts (almonds, pistachios) for garnish
**Instructions:**
1. **Prepare the Sev Katoris:**
- In a pan, heat 2 tablespoons of ghee over medium heat.
- Add 1 cup of sev and roast until golden brown, stirring continuously to prevent burning.
- If desired, drizzle 2 tablespoons of sugar syrup over the roasted sev for added sweetness and mix well.
- While the sev is still warm and pliable, take small portions and shape them into katoris (cups) using the back of a spoon or by pressing them into small bowls. Allow them to cool and harden, forming crisp sev katoris.
2. **Prepare the Rabadi:**
- In a heavy-bottomed pan, pour 1 liter of full-fat milk and bring it to a boil over medium heat.
- Once it boils, reduce the heat to low and let it simmer, stirring occasionally to prevent sticking.
- As a layer of cream forms on the surface, gently move it to the sides of the pan. Continue this process until the milk reduces to about half its original volume.
- Add 1/2 cup of sugar (or to taste), 1/2 teaspoon of cardamom powder, and a few strands of saffron if using. Stir well and cook for an additional 5-7 minutes until the sugar dissolves completely and the rabadi reaches a creamy consistency.
3. **Assemble the Dessert:**
- Once the sev katoris have cooled and hardened, carefully remove them from the molds or bowls.
- Fill each sev katori with a generous amount of prepared rabadi.
- Garnish with chopped nuts like almonds and pistachios for added flavor and crunch.
4. **Serve:**
- Serve the Rabadi Sev Katoris immediately to enjoy the contrast between the creamy rabadi and the crispy sev katori.
