Aloe Vera Sooji Halwa is a unique and delightful twist on the traditional semolina dessert, incorporating the health benefits of aloe vera. Here's how you can prepare it at home:
**Ingredients:**
- 1 cup semolina (sooji)
- 1/2 cup aloe vera gel (freshly extracted)
- 1 cup sugar
- 2 cups milk
- 1/4 cup ghee (clarified butter)
- 1/2 teaspoon cardamom powder
- A handful of chopped nuts (almonds, cashews, pistachios) for garnish
**Instructions:**
1. **Prepare Aloe Vera Gel:**
- Carefully extract the gel from fresh aloe vera leaves, ensuring to remove any yellow sap, as it can be bitter.
- Rinse the gel thoroughly to eliminate any residual bitterness.
2. **Roast Semolina:**
- In a heavy-bottomed pan, heat the ghee over medium heat.
- Add the semolina and roast until it turns golden brown and emits a nutty aroma. Stir continuously to prevent burning.
3. **Add Aloe Vera Gel:**
- Introduce the prepared aloe vera gel to the roasted semolina.
- Cook for a few minutes until the gel blends well with the semolina.
4. **Incorporate Milk and Sugar:**
- Pour in the milk, stirring constantly to avoid lumps.
- Add the sugar and continue to stir until it dissolves completely.
5. **Flavoring:**
- Sprinkle in the cardamom powder and mix well.
6. **Cook to Desired Consistency:**
- Continue cooking the mixture on low heat until it thickens to your preferred consistency, stirring occasionally.
7. **Garnish and Serve:**
- Once the halwa reaches the desired thickness, remove it from heat.
- Garnish with chopped nuts.
- Serve warm.
